Homemade sun 1.27.8

Yesterday my friend invited me over her house to help me make some homemade yum! That’s right, yum as in good eats.  I’m working on getting more direct sources of proteins to build up my immune system and so that my body can function better.

I don’t necessarily feel weak, lethargic or even sick but I’m working on being proactive as far as giving my body ample amounts of what it might be lacking as a result of being a vegetarian and a full exercise regimen.

So, we made fresh lentils, with a suffrito –hope I got that right, it’s the Dominican way of seasoning.  She sliced and mashed fresh garlic, I cut up fresh cilantro and onions and she put a spoon of olive oil in the pan, let it warm and then tossed in the seasonings. She later added half of what boiled in the pot into the pan along with fresh spinach and let it simmer for about 10 minutes. She subsequently added it to the other half of the lentils.  Man, it smelled so good. She made brown rice – we measured it out by cup and water- added pinches of sea salt and a bit of olive oil and we let it cook until all the water was gone and then we let it steamed.   When it was all said and done the lentils over rice was some of the best I’ve ever had, delicious and now I have leftovers for a  couple more days!!!

Talk about yum!
